Instructions

    Dissolve yeast in lukewarm milk with 1 tsp sugar, let foam for 10 minutes.

    Mix flour, remaining sugar, and salt. Work in eggs one at a time. Stir in yeast milk. Beat vigorously for 5 minutes until a smooth, elastic dough forms.

    Work in softened butter in small flakes gradually — brioche technique. Knead for 10 minutes into a glossy dough.

    Butter and flour a savarin mold (ring cake pan). Fill with dough — it should only half-fill the mold.

    Let rise covered for 45-60 minutes until dough reaches the rim.

    Preheat oven to 350°F (180°C). Bake savarin for 25-30 minutes until golden brown.

    While cake bakes: Bring water and sugar to a boil. Stir in vanilla seeds and orange zest. Simmer for 5 minutes. Remove from heat, cool to 158°F (70°C). Stir in rum. Stir in cannabis honey at under 149°F (65°C).

    Remove savarin hot from oven, immediately turn out of mold. Prick multiple times with a toothpick.

    Dunk savarin in still-warm syrup or pour syrup slowly over cake — it should be completely saturated.

    Let cool. Fill ring with whipped cream and seasonal fruit.
